Easy Chocolate Cinnamon French Toast Rolls (Vegan)

Ingredients

For the rolls:

  • 10 slices soft white bread
  • 150 g bar of vegan chocolate

For the French toast batter:

  • 3 Tablespoons cornstarch
  • 120 ml soy milk
  • 2 teaspoons maple syrup
  • 1 teaspoon vanilla extract

For frying:

  • 0.5 teaspoon vegan butter

For the cinnamon sugar:

  • 2 Tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

Make the chocolate rolls:

  • Take your 10 slices of bread. Slice the crusts off then flatten them with a rolling pin. You can use the crusts to make breadcrumbs another time.
  • Place a strip of the chocolate bar onto the edge of a piece of flattened bread and roll into a cylinder shape tightly.

Make the batter:

  • In a small bowl, whisk together the cornstarch and 1.5 Tablespoons of the soy milk to form a paste.
  • Mix in the rest of the milk as well as the maple syrup and vanilla.

Fry the rolls:

  • Place a non-stick frying pan over a medium heat and grease with the vegan butter.
  • Dip each of the chocolate rolls into the batter and fry until golden brown on all sides.
  • In another small bowl, mix the granulated sugar with the ground cinnamon to make cinnamon sugar.
  • Coat each bread roll in cinnamon sugar and serve warm. Drizzle with extra melted chocolate if you wish.

Notes

  • Make sure that the french toast rolls don't become undone before or after dipping. You want them to stay in a cylinder shape as they are frying inside the pan. The batter does help the bread to stick together when it is being cooked at a high heat.
  • As well as changing the bread, I also recommend frying the french toast rolls with something other than vegan butter. An example would be coconut oil.
