Easy Peanut Butter Stuffed Dates (Vegan, Gluten Free)

Ingredients

Stuffed Dates: 

  • 8 medjool dates
  • 35 g smooth peanut butter
  • 1.5 Tablespoons peanuts finely chopped
  • 30 g vegan chocolate chips melted
  • Pinch of sea salt optional

Instructions

Make the stuffed dates: 

  • Slice your dates down the center to about halfway and remove the pits. Don’t slice all the way through. The dates should open and close like a book.
  • Fill each date with a spoonful of smooth peanut butter and a few chopped peanut pieces.
  • Melt the vegan chocolate chips using the double-boiling method or in the microwave. Close the dates and drizzle chocolate onto each other them. Garnish with a little sea salt if you wish.  
  • Place the dates in the freezer to set for 15 minutes.

Notes

  • If you aren't using the recommended medjool dates which are large, avoid using small dates as they will be harder to fill and slice accurately. Some other larger types of dates include safawi dates and piarom dates. They also taste great.
  • When slicing the dates, make sure that you only cut them half way across so that a pocket is formed. If you slice too far, the pocket will be too loose and therefore, it will be hard to keep the peanut butter and chopped peanuts inside.
