Oatmeal mixture:
- 1 flax egg 1 Tablespoon ground flaxseeds mixed with 3 Tablespoons water
- 1 ripe banana mashed
- 1 Tablespoon Biscoff spread
- 1 Tablespoon maple syrup
- 0.25 teaspoon vanilla extract
- 90 g oat flour
- 0.5 teaspoon baking powder
- 100 ml soy milk
Toppings:
- 1 Tablespoon Biscoff spread melted
- Biscoff biscuit crumbs to taste (finely crushed)
Make the baked oats:
In a small bowl, mix together the flax egg, mashed banana, Biscoff spread, maple syrup and vanilla extract.
Next, add in the oat flour, baking powder and soy milk. Whisk to combine with a fork.
Pour the baked oats mixture into a bowl or a large ramekin and microwave for 2 minutes 30 seconds.
Top with melted Biscoff spread and Biscoff biscuit crumbs.
- Whether you bake the oats inside a large bowl, a skillet or baking dish, make sure that it is completely non-stick. The last thing that you want is them to become stuck so you can even brush the bottom and sides with vegan butter if you wish.
- This is a single serve recipe but you can double or triple the ingredients if you'd like to make 2-3 servings.
