Vegan Chocolate Banana Pops

Ingredients

Banana Pops:

  • 5 medium bananas
  • 10 popsicle sticks/skewers

Coatings:

  • 300 g vegan chocolate chips
  • 2.5 tablespoons coconut oil
  • 50 g peanut butter optional

Toppings:

  • 20 g salted roasted peanuts chopped
  • 10 g desiccated coconut
  •  

Instructions

  • Preparing the bananas: Peel the bananas and cut them in half.
  • Stick a popsicle stick or a skewer into the chopped end of the banana so that it is sturdy, stable and holdable. Freeze overnight on a covered baking tray.
  • Making the coating/s the next day: In a microwave-safe mason jar, add the chocolate chips along with the coconut oil. If you want a nuttier chocolate taste, add the optional peanut butter here too. Give it a mix so that the chocolate and peanut butter are covered by the coconut oil.
  • Microwave the mixture in 20 second intervals, stirring with a fork after each. Repeat this process until the chocolate is smooth and runny.
  • Take the frozen bananas out of the freezer and dip them into the melted chocolate one at a time. After dipping, immediately top them with the peanuts, desiccated coconut or your choice of toppings. Make sure that you complete this process as quickly as possible so that the chocolate doesn't harden in the jar. 
  • Let the chocolate set and then enjoy. If you don't eat them all, place back in the freezer again. Enjoy!

Notes

  • Your banana pops will keep in the freezer for 2-3 months.
