5 Minute Chocolate Baked Oatmeal (Vegan, Gluten Free)

Ingredients

Oat mixture:

  • 1 flax egg 1 Tablespoon ground flaxseeds mixed with 2.5 Tablespoons water
  • 1 ripe banana mashed
  • 1 Tablespoon maple syrup
  • 0.25 teaspoon vanilla extract
  • 90 g oat flour
  • 1.5 Tablespoons cocoa powder
  • 0.5 teaspoon baking powder
  • 100 ml soy milk

Toppings:

  • Vegan chocolate to taste (melted)
  • Gluten free Digestive biscuit crumbs to taste

Instructions

Make the baked oatmeal:

  • In a medium bowl, mix your flax egg, mashed banana, maple syrup and vanilla extract.
  • Now, pour in the oat flour, cocoa powder, baking powder and soy milk. Mix well with a fork.
  • Pour your oatmeal mixture into a breakfast bowl and microwave for 2 minutes 30 seconds.
  • Top the oats with melted dairy-free chocolate or chocolate spread and Digestive biscuit crumbs.

Notes

  • The oats will dry out quick if left in the microwave for too long. Leaving the chocolate baked oats in the microwave for 2 minutes 30 seconds will cause the top layer of the oats to seem a little dry but the insides will be nice and perfectly creamy. If you cook for just 2 minutes they will seem a little creamier all the way through.
  • I like to serve this recipe with melted chocolate and gluten free Digestive crumbs but you can also add things such as, chopped nuts and melted vegan white chocolate. Choose what is best for you!
