These quick and easy baked goodies take less than 20 minutes to make so there is no reason not to give them a try. Simply make the cookie dough and bake. They're ready in no time at all.
What I love about these treats is that they contain both dark and white chocolate. This way you don't have to choose one of the two as a filling. The cookies taste great when served slightly warm.

Why You Will Love These Cookies
- Great Texture - Although these cookies are quite chunky, they're also super soft and easy to eat just like my vegan banana chocolate chip cookies and vegan white chocolate macadamia nut cookies. They have a slight crunch and crisp on the outside, while the insides are velvety and delicious.
- Amazing Flavors - Along with the regular chocolatey taste which comes from the cocoa powder, there are two other chocolate flavors to content with. The richness of the dairy-free dark chocolate, along with the buttery and milky taste of the dairy-free white chocolate.
- So Moreish - I love a homemade cookie and I usually like to eat them fairly sporadically. However, with these cookies, I always end up eating one, then another one and after that, another one. They truly are so moreish. Before you know it, you've eaten ten.

Ingredient Notes
- Cocoa powder - Your cookies will be even tastier if you use high quality cocoa powder as opposed to a cheap alternative. By spending an extra dollar or two you can get some amazing cocoa powders which will leave your chocolate cookies tasting rich and extra decadent. - Granulated sugar - Whites sugars like regular granulated sugar give cookies a crispier edge.
- Light brown sugar - This kind of sugar is perfect for chocolate cookies due to its molasses content. This makes gives them a gorgeous sweetness, as well as great moisture and softness.
- Vegan dark chocolate chips or chunks - Dark chocolate is the easiest type of vegan chocolate to find as much of it is often naturally vegan, without any milk products added.
- Vegan white chocolate chips or chunks - Use any vegan white chocolate that you like for this recipe. Dairy-free white chocolate isn't always as readily available as it's milk and dark counterparts so if you find white chocolate chips, chunks or a bar, it's fine to use it.

Substitutions & Variations
- Vegan dark chocolate and vegan white chocolate are recommended in the recipe card for these cookies, but that doesn't mean that you can't use other types of chocolate chips or chunks such as, a vegan milk chocolate variation like I used for my vegan espresso chocolate chip cookies. It would be a super delicious alternative to one of the other types.
- Although I haven't tested any dietary substitutions for this recipe, you will be able to make these triple chocolate cookies gluten free by swapping out the regular all-purpose flour for a 1:1 gluten free baking all-purpose flour blend. They're commonly available in most larger grocery stores.

Expert Tips
If the cookie dough is dry - Try adding soy milk to the dough half a teaspoon at a time until it reaches a bindable consistency. The cookie dough should be a little sticky so that it is easy to bind together with your hands.
If the cookies don't flatten - There are many reasons why the cookies may not flatten at all. If they don't after the 12 minutes in the oven, press them down with a fork gently while they are still soft. These particular cookies are quite chunky so they don't flatten too much.
Recipe FAQs
The oven temperature was too high or they were baked for too long. Don't bake the cookies longer than the recommended amount of time. They should be slightly soft when they come out from the oven so that they can set fully at room temperature.
Although this is totally optional, you can place your cookie dough into the fridge for 30 minutes before baking. This is a technique that can help to prevent unwanted spreading.
Store these cookies in an airtight container at room temperature for 3 days.

Chunky Vegan Triple Chocolate Cookies
Ingredients
Dry Ingredients:
- 125 g all-purpose flour
- 30 g cocoa powder
- 0.5 teaspoon baking soda
- 0.25 teaspoon salt
- 50 g granulated sugar
- 50 g light brown sugar
- 20 g vegan dark chocolate chips or chunks
- 20 g vegan white chocolate chips or chunks
Wet Ingredients:
- 0.25 teaspoon vanilla extract
- 3 Tablespoons vegetable
- 3 Tablespoons soy milk
Instructions
Preparation:
- Line a large baking tray with parchment paper. Set aside.
- Preheat your oven to 160 Celsius (325F).
Make the cookie dough:
- In a medium-sized mixing bowl, add the dry ingredients. Mix to combine.
- Add the wet ingredients and combine again until a cookie dough forms. Be patient as it may seem a little dry at first.
Bake the cookies:
- Use a cookie scoop or a small ice cream scoop to scoop 1.5 tablespoons of cookie dough for each cookie. After scooping the cookie dough, roll it into balls and place them on the baking tray about 2-3 inches apart. Add extra chocolate on top if you wish.
- Press the cookies down a little on top.
- Bake your triple chocolate cookies for 12 minutes in the center of the oven. When they are done, let them cool for 10 minutes.
