    Easy Vegan Peanut Butter Mug Cake

    If you're a lover of peanut butter lover you need to try this vegan peanut butter mug cake recipe as soon as possible.

    This easy and tasty treat in the form of a sweet microwave cake takes less than five minutes to make to which is great for when you need a sweet snack to munch on, in no time at all.

    Any of you who has ever made one of my mug cake recipes before will know that their texture tends to be super soft, fluffy and light. This nut butter dessert is no different and I can't wait for you to try it.

    Why You Will Love This Mug Cake

    • The Best Texture - Considering that this mug cake is ready in such little time, it has an incredible consistency which is incredibly soft. Potentially even softer than my vegan banana chocolate chip muffins which is quite an achievement in itself!
    • Tasty Flavors - As you may expect, this mug cake has a very 'peanut buttery' flavor. However, the nuttiness also isn't as strong as you may think. It also is isn't subtle. Imagine somewhere in the middle. It's a very delicious taste nevertheless.
    • Easy to Make - This recipe couldn't be any easier. All you need to do is heat treat the flour, mix the mug cake ingredients together, pour the mixture into the two ramekins and bake. It's honestly just as easy as my vegan mug brownie and if you've ever tried that particular, classic chocolatey recipe, you'll know what I mean.
    • Allergy Friendly & Plant Based - This peanut butter mug cake recipe is entirely vegan and dairy free.

    Ingredient Notes

    • All-purpose flour - Only use ordinary all-purpose flour (plain flour) for this peanut butter mug cake. I haven't tested any other variants and for the best results you should definitely stick with what works best.
    • Granulated sugar - I was originally going to use a brown sugar for this recipe, but I opted for granulated sugar instead. This is due to the high molasses content inside brown sugar. I was worried that it may peanut butter the cake a little and I didn't want to shift the focus.
    • Vegan butter - This is a vegan fat alternative which not only improves the texture of the mug cake, but also amazing flavors.
    • Smooth peanut butter - The main ingredient for the cake. I almost always use smooth peanut butter. However, if you're a big fan of crunchy peanut butter, feel free to use that in its place. I also made this an option for both my vegan chocolate peanut butter almond bars and vegan peanut butter stuffed dates.
    • Plant milk - I used soy milk for this recipe but there are certainly other options. I also particularly enjoy using almond milk and oat milk from time to time.
    • Vanilla extract - This adds a little kick to the mug cake which I love.

    Substitutions & Variations

    • An awesome hack for this recipe involves adding 1 teaspoon of cocoa powder to your peanut butter batter mixture. This way you can have yourself a slight hint of chocolate while enjoying the peanut butter vibes. My vegan chocolate peanut butter cake and vegan chocolate peanut butter fudge recipes also combine these flavors and many people love it.
    • Instead of pouring extra peanut butter over the top like I often do, you can pour a different topping over the mug cake. Of course, these are all optional, but I like to also pour maple syrup, melted dairy-free chocolate and melted Biscoff spread over mine.

    How To Make Vegan Peanut Butter Mug Cake

    For the full method, please refer to the recipe card at the bottom of this post.

    1: Place your flour into the microwave, then cook for 1 minute 15 seconds. Use 15 second intervals. This is called heat treating.

    2: Add the dry ingredients to a small bowl, then mix in the wet.

    3: Pour your peanut butter mixture into two medium-sized ramekins.

    4: Place your mug cakes (one at a time) into the microwave for 1 minute.

    Expert Tips

    Don't forget to heat treat the flour - You must heat treat your flour before mixing your ingredients. Raw flour cannot be consumed and it can make you sick! Follow the instructions closely in the method below so that you do it correctly.

    Pay close attention to the mug cake whilst it's in the microwave - Keep an eye on your chocolate mug cake while it is cooking. Cook for no longer than 1 minute 15 seconds. Any more time than that will cause the peanut butter mug cake to become over cooked and it will have an unappetizing texture.

    Recipe FAQs

    Why did my mug cake turn out rubbery?

    This could mean one of two things. The recipe ingredient amounts weren't followed properly or the mug cake was over-cooked. To avoid this, be vigilant when measuring out the ingredients and remove the mug cake from the microwave when the wetness has just become non-visible.

    Can you eat undercooked mug cake?

    Fully cook your mug cake and stick to the recommended timings. Consuming undercooked cake or mug cakes can make you sick!

    How can I store peanut butter mug cake?

    I highly advise that you eat this mug cake as soon as it is ready for ultimate freshness. If that isn't possible, place it on a small plate, place some plastic wrap over it and store inside the refrigerator for a further 24 hours.

    Ingredients

    Dry Ingredients:

    • 50 g all-purpose flour heat treated
    • 80 g granulated sugar
    • 50 g vegan butter melted
    • 75 g smooth peanut butter

    Wet Ingredients:

    • 75 ml plant milk
    • 0.5 teaspoon vanilla

    Topping: 

    • 50 g peanut butter melted (optional)

    Instructions

    • Before doing anything, you need to heat treat the flour. Place the flour into a microwave-safe bowl and cook for 1 minute 15 seconds, at 15-second intervals. Your flour will then be safe to use. 
    • To a small bowl, add the flour, sugar, vegan butter and peanut butter. Mix well.
    • Next, pour in the plant milk and vanilla. Mix again so that all the ingredients are fully combined. 
    • Pour the mixture into 2 small ramekins.
    • Cook the cakes, one at a time in the microwave for 1 minute. Every microwave is different so some may require 1 minute 15 seconds. 
    • Pour extra melted peanut butter over the top if you wish and enjoy!
