Love a tasty ice cream sundae? How does a caramel fudge brownie sundae sound to you? Mine is packed with the most chocolatey brownies, dairy-free vanilla ice cream, dairy-free whipped cream, chocolate shavings, homemade caramel and a cherry.
I know that it sounds like a lot but believe me, everything in this recipe goes so well together. It also takes less than 30 minutes to make this treat which is great.
If you ever have some brownies which come out of the oven too crumbly, this sundae makes a perfect snack hack which is so easy to assemble. Simply crumble up your whole batch of brownies and you can make several of these desserts.

- It's Dreamy - I can't begin to describe how creamy, dreamy this treat is. It contains both whipped cream and ice cream which both soak gorgeously into the rich brownies. - Delicious Layers - The way that I decided to stack the dessert ingredients inside the glass meant that there was a perfect ratio of each of them. I kept them brownies apart from each other so that they were evenly distributed.

Ingredient Notes
- Dairy-Free Baking Chocolate - This will be melted before being added to the brownie batter. The chocolate makes the brownies extra rich and delicious.
- Dairy-Free Yogurt - This works as an egg-replacer for the brownies.
- Brown Sugar - In comparison to granulated sugar, brown sugars such as, Demerara sugar contain lots of molasses which brings moisture and deep flavor to baked goods such as, my vegan cranberry ginger cake, vegan sticky date pudding cake and my vegan chocolate mousse cake.
- Dairy-Free Ice Cream - I choose to use vanilla dairy-free ice cream for this recipe. You can use any flavor that you like.
- Fresh Cherries - I don't recommend using half glacé cherries or candied cherries for this recipe. Fresh ones taste great with the other ingredients.

Substitutions & Variations
- If you love an ice cream sundae which is even more chocolatey than mine, you can make this one into a delectable hot fudge brownie sundae. After assembling the desserts, melt some extra chocolate and add it to the dessert while it is still warm. No matter how you decide to serve up your sundae, it's going to be drool-worthy!
- Instead of the recommended store-bought canned dairy-free whipped cream, you can alternatively use my vegan coconut whipped cream instead. It has a slightly different flavor and is a healthier option. I made the store-bought version the main choice due to convenience.
How To Make Caramel Fudge Brownie Sundae
For the full method, please refer to the recipe card at the bottom of this post.
1: Line and grease a square baking pan well. Set aside for later.
2: Melt the chocolate inside a heatproof bowl using the double-boiling method.
3: Cream together the dairy-free butter and sugar inside a separate bowl.
4: Pour the chocolate and wet ingredients into the butter sugar mixture and combine.
5: Add the remaining dry brownie batter ingredients and fold.
6: Spoon the brownie batter into the prepared cake pan. Bake inside the oven.
7: Let the brownies cool a little.
8: Crumble the cooler brownies with your hands into smaller pieces.
9: Place a layer of brownie at the bottom of a dessert glass.
10: Top the first layer with dairy-free whipped cream and more brownie pieces.
11: Scoop some dairy-free ice cream and place it on top of the whipped cream and brownie layer.
12: Grate some extra chocolate on top of the ice cream and also place a cherry on top.
13: Finally, drizzle some homemade caramel over the sundae.
Expert Tips
Use high quality cocoa powder - There is a distinct difference in quality between regular priced cocoa powders and higher quality ones. It's totally worth spending that extra dollar or so on a high quality one so that your brownies can be extra chocolatey and rich.
Don't burn the caramel - When making the homemade caramel topping, the temperature requirements change a few times. Be vigilant and aware so that it doesn't burn.
Recipe FAQs
Brownie sundaes consist of warm brownies, ice cream, whipped cream and a cherry. I also like to add caramel sauce to mine.
Fudge brownies are a little more dense than regular brownies. I like to add lots of chocolate to the brownie batter to get them this texture. They're also richer than ordinary brownies.
As the sundae contains both ice cream and whipped cream, it will melt quickly at room temperature. If you can't eat the sundae straight away, cover it with plastic wrap, and place it into the fridge for up to an hour. The great thing is, it still tastes great when it's melty.

Caramel Fudge Brownie Sundae
Ingredients
Brownies:
- 200 g dairy-free baking chocolate
- 120 g granulated sugar
- 60 g dairy-free butter room temperature
- 120 g plain dairy-free yogurt room temperature
- 1 teaspoon vanilla extract
- 90 g all-purpose flour sifted
- 10 g cocoa powder sifted
- 1 teaspoon baking powder
- 1 teaspoon salt
Caramel Sauce:
- 120 g coconut cream
- 0.5 Tablespoon cornstarch
- 90 g brown sugar demerara
- 0.5 teaspoon dairy-free butter
- Pinch of salt
Extra Toppings:
- Canned Dairy-Free Whipped Cream to taste
- 1 scoop dairy-free ice cream of your choice
- Dairy-free chocolate shavings to taste
- Fresh cherries to taste
Instructions
Preparation:
- Preheat the oven to 177 Celsius (350F).
- Line an 8-inch, square baking pan with parchment paper and set aside.
- Melt the chocolate using the double-boiling (bain-marie) method inside a large heat-proof bowl until it is smooth. Set aside.
Making the brownie batter:
- Cream the sugar and dairy-free butter inside a large mixing bowl.
- Once they’re nicely combined, pour in the melted chocolate, dairy-free yogurt, vanilla extract. Mix well until all the ingredients are incorporated.
- Next, add in the flour, cocoa powder, baking powder and salt. Fold the brownie batter until the flour is just combined. Don’t over-mix.
Baking the brownies:
- Spoon the brownie batter into the prepared baking pan and smooth out the batter with a palette knife.
- Bake your brownies in the center of the oven for 18-20 minutes. Every oven is different so times may vary a little.
- Let the brownies cool inside the pan for 10 minutes so they they are still warm but not piping hot.
Making the caramel:
- While the brownies cool, make the caramel sauce. To a small saucepan add all the caramel ingredients. Stir constantly over a medium heat until the coconut cream melts.
- When your caramel starts to bubble, reduce to a simmer and continue to cook over a low heat for a further 4 minutes. Keep stirring continuously.
- Remove the caramel from the heat and allow it to sit inside the pan for a few more minutes so that it can thicken more.
Assembling the sundae:
- Slice the brownies into equal squares, then crumble them into smaller pieces.
- To serve your sundae to be served in the classic style (in a dessert glass), fill the bottom of the four glasses with the warm crumbled brownies. You can then top them with the remaining ingredients. A layer of whipped cream, followed by more brownies, followed by ice cream, topped with chocolate shavings, caramel and a cherry.
